EDS and healthy food

I love food. You could say that I am an addict. I've always loved to cook and have guests over for dinner. EDS didn't change this, but the way I cook did change over time. During my research, looking for answers about what was wrong with me, I found that my digestive system didn't work properly. Some nutrients could not be properly absorbed by my body. It took me a long time to find out which nutrients where causing my lack of energy, diarrhea, constipation, dry skin, bruising, and so on. After some advice from doctors, I started taking supplements like vitamin B6 sulfate, manganese, zinc, magnesium and omega 3 and 6. I also tried to ditch wheat and gluten from my diet. The problem is that I love bread. I could not live without it. Luckily spelt flour works for me. I try to eat meat no more than three times a week. That means I mostly live on vegetables, fruits, nuts and seeds, some cheese, fish, dark chocolate and other non-processed foods.

With this blog, I want to show you how I eat, cook and enjoy food. I post recipes with nutritional information to give some pointers you can work with. I hope you will be inspired to try some of my recipes. Have fun!
